Recipe for moist muffins! I added chocolate chips for a yummier (and more fattening!) version. I added Nestle Fitnesse and Fruit cereals as toppings for the first batch i cooked (photo). The next one didn't have any toppings. The batch with toppings was more mabenta!

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup butter or margarine
  • 2 cups white sugar
  • 2 cups mashed overripe bananas
  • 4 eggs, beaten
  • 1 cup semi-sweet choco chips optional)
  • cerals for topping (optional. you may use the fruit and nut version--goes well with the banana bread!)
Preheat the oven to 350 degrees F (175 degrees C). Grease (or put muffin cups) the muffin tray.

Sift the flour, salt and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Stir in the bananas, eggs, and chocolate chips until well blended. Pour the wet ingredients into the dry mixture, and stir just until blended. Do not overmix!!! The muffins won't be moist if overmixed. Put one scoop (use ice cream scoop) into each muffin mold. Top with the fruit and nut cereals.

Bake for 30 to 35 minutes in the preheated oven. Let the muffins cool in the tray for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture.
